Old New year or Christmas eve is celebrated every year in the night from 13 to 14 January. According to tradition, the evening of 13 January, the Ukrainians have long been cooked the Christmas pudding, which is popularly called generous. It was filled with lard, cream or butter, adding all the other ingredients. It was believed that the richer cooked – with lots of food – kutya, the better yield and higher prosperity in the family.

Classic Generous kutia

Ingredients:

200 g of wheat grits

125 g cream

125 g poppy

50 g peeled nuts

50 g raisins

vanilla

sugar

Method of preparation:

1. Enumerated and washed grits cook until soft for 2 hours, strain, refrigerate.

2. Poppy pour boiling water and heat until soft. Filter through a dense sieve, dry, mince.

3. Connect the poppy with wheat. Add chopped nuts, raisins, cream, vanilla, sugar and honey to taste. Mix.

Generous kutya with uzvar and cognac

Ingredients:

400 g wheat

200 g poppy

100 g of nuts

100 g of dried fruits (raisins, apricots, prunes)

100 g of honey

1 tablespoons brandy

50 g of dried apples and pears (for Uzvara)

Method of preparation:

1. First prepare the compote. Add 50 g washed dried apples and pears 200 ml water, bring to a boil. Remove from heat and allow to stand for at least 2 hours.

2. Then boil the wheat until tender, Gulf grain with water in proportion 1: 3.

3. Mac pour boiling water, and then RUB. Nuts and dried fruit cut into small pieces. Connect the wheat with dried fruit, nuts and poppy seeds.

4. In a glass compote stir the honey and add it to the pudding. Note that the pudding should not be liquid – you may not need all of the compote. At the end pour a spoonful of brandy.

Generous Christmas pudding with brandy and butter

Ingredients:

1 Cup of wheat grits

0.5 cups of poppy

0.5 Cup walnuts

50 g butter

1-2 tbsp brandy

0.5 – 1 Cup raisins

Method of preparation:

1. Soak the wheat overnight, if you have no time, for 2 hours.

2. Fill it with water in the ratio 1: 2 (1 part grain, 2 parts water). Add salt and bring to a boil on low heat for about an hour.

3. Until cooked porridge, soak the poppy seeds and raisins in boiling water. Chop the nuts and fry them on a dry pan.

4. Drain the water from the poppy seeds and raisins. Grind poppy seeds in a blender or mash manually to let the milk.

5. Mix all the ingredients. Add butter, liquid honey and brandy.

Add more the cooking traditions of Kuti on the Old New year:

  • When the pudding is cooked in the house should be quiet and peaceful.
  • The wheat is taken, and the water is clean.
  • A proper Christmas pudding consists of 3 components: basics, dressings and supplements.
  • So barley is not burned, use a heavy-bottomed pot for cooking, a better – cast iron.
  • Combining all components, they need to warm up 10 minutes, preferably in clay pots.
  • A thick pudding dilute with boiled cooled water, decoction of cereals or stewed fruit.
  • Porridge does not keep long, as the honey may ferment. For this reason, it is not recommended to put fresh fruit. It is better to add the honey just before serving.
